Spanos Italian Restaurant

Potato Gnocchi
W/ Italian Sausage


2 Pounds Boiled Potatoes Drained well

1 pound (or so) Flour

Salt Pepper To Taste

Mix Potatoes With Mixer until Fluffy

add Flour a little at a time kneading with your hands
until dough like consistency add flour as needed.
  At this point you season the dough.

Roll out to about 1/4 inch thick. Cut straight lines and roll them into little snakes. Then cut about 1/2 inch pieces. Roll down the back of a fork to form ridges making the signature gnocchi shape.
Boil until they float then boil 2 more minutes.
Toss with Tomato Sauce, and Sliced Sausage.
