Autumn Sweet Pear, Apple, Orange and Blackberry Pudding

Recipe yields 25 servings

Pastry Mix
2lbs 4oz ----------------Self-Rising Flour
12 oz -------------------Butter Melted
7 oz ---------------------Brown Sugar
8 only -------------------Egg
pinch--------------------Ground Cinnamon
8 Large Tablespoons----Golden Syrup
4 -----------------------Zest of Orange-Keep juice for Fruit
1 pint or 2 cups ---------Milk

Pudding Mix

Sweet pears -- peel, Cored and quartered --6-8 pears

Sweet Apples or Tin Apples -- Peel, Cored and Quartered -- 4lbs

Melted Butter -- 2oz

Orange Juice -- 4--Use from Pastry

Blackberries or anyother autumn fruit -- 1lbs

Sugar Caster -- use more if required -- 8oz

Corn Flour -- Dilute with Little Water -- 2 oz

 

Cook Apples, Peaers and sugar, add orange juice and thicken with corn flour. Cool. Add blackberries. Grease dish or baking tray and fill dish just above half. Pour pastry mix on top. Bake for 20 to 25 minutes at 320F. When cooked, cut into portions and dust with icing sugar. Serve with egg custard or sweet cream.
