Copper Creek

Grilled sword fish with melon mango salsa

4 ea. 8 oz sword fish steaks
Olive oil
Salt and pepper
Rub olive oil over fish, salt and pepper to taste
Grill until done

Melon mango salsa

½ cup cantaloupe small diced
½ cup mango small diced
3 tbl red bell pepper chopped fine
3 tbl green bell pepper chopped fine
3 tbl red onions chopped fine
½ jalapeño chopped fine
1 tbl chopped cilantro
1 clove of garlic chopped fine
1 tbl lime juice
1 tsp white wine vinegar
1 tsp cumin
Salt and pepper to taste

 

Add all ingredients in bowl and let it sit for 1 hour

Serve over sword fish

Orzo pasta

½ lb orzo pasta cooked
3tbl olive oil
2 roma tomatoes small diced
6 leaves of basil sliced

mix all ingredients chill and serve
