MCM Elegante
8 oz Flat Iron Steak
- Salt & Pepper
- Bordelaise Sauce
- 1Cup Demi- Glace
- ½ Cup Red Wine
- 2 -3 Shallots (chopped)
- 1 tsp Tyme
Salt & Pepper Flat Iron Steak. Put pan over high heat add enough oil to cover bottom of pan. Bring oil to smoking point and carefully add steak. Cook steak until nice and brown on all sides. Remove steak from pan place on a plate and finish cooking to desired temperature in 400 oven.
In the same pan add a little oil. Saute the shallots until clear. Add red wine and reduce by half. Then add your demi-glace and reduce to a thick consistency. Finally add chopped tyme to finish.
Remove steak from oven, then let sit for 10 minutes. Cut steak in thin strips and arrange vegetables and starch on plate. Plate steak in a fan formation, spoon bordelaise sauce on meat.
