Parmesan Crusted Tilapia
Tomato Sauce
- 8oz Diced Onion
- 8oz Diced Carrots
- 4qts Canned Tomato chopped
- 2qts Tomato Puree
- 2 Cloves Garlic chopped
- 1 Bay Leaf
- 1/4tsp Thyme
- 1/4tsp Rosemary
- Salt & Pepper to taste
- Sugar to taste
Method:
Saute onions and carrots until soft. Add herbs and spices and saute for a few minutes.Add tomatoes and puree and cover and simmer for 30 minutes. Adjust flavor with salt, pepper and sugar.
Crust:

1cup Panko Breadcrumbs

1cup Parmesan Cheese

1cup Parsley chopped

Method:
Add all ingredients into food processor and pulse together.
Dip Tilapia in flour, then egg wash and finally into Panko mixture. Pan fry until fish is cooked.
Pasta:
Method:
Saute garlic, onions, mushrooms until brown. Add squash and zucchini and cool until soft. Add pasta and tomato sauce and simmer until heated throughout. Add salt & pepper to taste
Put pasta and sauce into bowl and top with tilapia. Garnish with Parmesan cheese and chopped parsley
