Spano's Italian Restaurant
Roasted Lamb and Pesto saute

    8 oz thin sliced Roasted Lamb
    2 cloves garlic
    1 tbls oil
    2 roma tomatoes
    1/4 large purple onion
    6 white mushrooms
    2 tbls pesto
    2 tbls alfredo or heavy cream
    salt pepper
    1 lb cooked Penne pasta
    1/4 cup white wine


    Saute garlic in oil until brown begins, add tomatoes, onion, and mushrooms, and Lamb. allow to simmer until pan starts to get dry. Add wine and deglaze pan. after the alcohol cooks down add the cream, pesto salt and pepper, toss pasta and serve immediately. Serves 2 Don't like Lamb, add thin steak or chicken!!!
