Red
Pepper Pasta (Serves 2)
Ingredients:
3 Tbsp. olive
oil
2 large Roma
tomatoes
4 cloves
garlic
1 small red
onion
Green and
black olives to taste
Shrimp sausage
or chicken (optional)
1 teaspoon
sea salt
1 pound Penne
pasta
1 teaspoon
red pepper (or to taste)
Preparation
In
a hot skillet add olive oil & garlic (chopped)
Cook
garlic until golden brown
Add
tomatoes, olives & red peppers..sprinkle with sea salt.
Cook
all ingredients until tomatoes & onions are caramelized
Then
add your choice of meat until cooked
Meanwhile,
in a pot of boiling water add the Penne pasta until tender...about
6 minutes.
Add
pasta and toss.
